GARIBALDI MEXICAN SALSA JALAPEÑO GREEN ENCHILADAS

Enchiladas with Garibaldi Jalapeño Salsa

INGREDIENTS 

  • 1 1/2  cups of cooked chicken, shredded
  • 1 cup mozzarella, shredded
  • 6 corn tortillas 
  • 1 jar of Garibaldi Jalapeño Salsa 
  • 2 tablespoons of sour cream or plain Greek yogurt 
  • A handful of fresh cilantro, chopped 

DIRECTIONS 

  1. Preheat the oven to 375°F.  
  2. Wrap the Tortillas in a damp paper or tea towel and microwave them for 1 minute to soften them. 
  3. Coat the bottom of a baking dish with Garibaldi Jalapeño Salsa.  
  4. Fill the tortillas with the shredded chicken, roll them up like a taquito, and arrange in the baking dish. 
  5. Top the rolled tortillas in the baking dish with the Garibaldi Jalapeño Salsa and shredded cheese. 
  6. Bake in the oven 20 minutes until the cheese is melted and bubbling.  
  7. Serve with a dollop of cream-yogurt and cilantro.
